Yuzu Mousse Cake

早在兩個多星期前報的課,原本想和女兒一起上這課的,但這幾天女兒放學回家都遲了,因為學校附近的一段路有工程,所以封了,弄致交通擠塞,而令她回家遲了,也因為這樣,最後決定不帶她去,免得遲了上不到課.

昨天才做了柚子牛油忌廉,今天又學柚子味蛋糕,這餅很容易做,是很簡單的柚子慕絲,夾着海綿蛋糕和橙肉,原來和昨天做的杯子蛋糕一樣,都是夾橙味的,橙味配柚子味的確甚適合,導師也示範了製作馬卡龍,以前也跟他的課學過馬卡龍,但他現在的馬卡龍跟以前的不一樣,現在的更漂亮,如他所說是進步了,所以報了下星期的馬卡龍課,再進一步鑽研馬卡龍.

柚子牛油忌廉的做法在我上一篇網誌裏,紅色字”食譜”的連結可以看到,就是先做馬令(蛋白霜),要寫出來也頗長,看示範會較好,馬令的做法可以參考這個示範http://tv.sina.com.hk/cgi-bin/nw/show.cgi?id=65df42d0569fcbfa

基本上是一樣的,只是柚子牛油忌廉沒有用cream.兩者做好並放涼後,與放在室溫至軟身的牛油混合就成了.
