這個月仍是忙忙忙，老公生日也沒有做蛋糕，原本買了材料做拿破崙餅的，但最後也因沒時間而沒有做，既然材料已買，想過幾天有時間再做吧，但最終還是抽不出時間來做，因為做拿破崙餅是要用上三小時的．上星期在Now電視台的Cooking Mama節目裏，看到教做馬卡龍，想起雪櫃還有些放了很久的蛋白，不如用來試做這食譜吧，昨天做了一盤粉紅色的，但入爐後全裂面，可能爐溫過高吧，今天再做一盤，做黃色的，因為未做過黃色，今次將溫度降低點，但仍是有裂面，只有幾個沒有裂，顏色也不理想，也做不到像電視看到的外脆內軟，唯有下次再努力吧．

馬卡龍也是這幾年才在法國以外的地方流行起來的,可能馬來西亞人不愛吃太甜吧,因為這甜點是真的很甜的,幸好現在很多食譜都改得沒有那麼甜,才較多人接受到,這餅樣子漂亮,實在有很多女士都喜愛它呢~:>

以我的經驗,這餅要成功,最重要是麵糊攪拌後和入爐前的狀態,還要注意爐溫,因為我試過很多的食譜,只要做到以上幾點都會成功.
藍色的夢,
這是我今次做馬卡龍的食譜,是跟Yvonne在NowTV的節目Cooking媽嫲裏的示範做的,是一邊看電視一邊抄寫的,食譜如下:
馬卡龍 by Yvonne
杏仁粉25g
糖粉23g
粟粉3g
蛋白25g
砂糖23g
色素少許
1. 先將蛋白打起，砂糖分幾次加入蛋白內一起打發至企身．
2. 將色素拌入１裏，調成喜愛的顏色．
3. 將杏仁粉，糖粉和粟粉混合過篩後，分幾次拌入２裏．
4. 將３攪拌成少許流動的狀態．
5. 將４唧在爐盤上放涼至表面完全乾燥，直到用手觸摸表面不會黏手．
焗爐以180度預熱，入爐時改至150度焗10分鐘，然後改120度焗4分鐘，再改至110度焗5分鐘便可．
